Liisa Lähteenmäki is a Professor of Consumer behaviour and Food Choice at the Department of Management at Aarhus University. She has a background in nutrition and psychology. Her current research interests are on consumer behaviour in relation to food-related decision making, including the roles of intrinsic and extrinsic factors as antecedents of food choice decisions. Especially the acceptance of novel foods and technologies have been in the centre of studies together with the role of health and sustainability related information as factors that influence how products are perceived. Professor Lähteenmäki has published over 100 original peer-reviewed articles and acted as an editor in journal Appetite over ten years.

Giuseppe Di Vita is an Associate Professor of Agricultural Economics and Rural Appraisal at the Department of Agriculture, Food and Environment of the University of Catania. In 2018, he became an Associate Professor at the Department of Agricultural, Forest and Food Sciences of the University of Turin where he worked till 2023. Subsequently, he served as an Associate Professor of Agricultural Economics at the Department of Veterinary Sciences of the University of Messina. He has published more than 140 works (H-index: 24), including articles in scientific journals and volumes, and he is engaged in numerous national and international research projects. His research interests are focused on climate change and consumer behaviour. He is an ordinary member of the Italian Society of Agricultural Economics (SIDEA) and the European Association of Agricultural Economists (EAAE). He is actively involved in scientific editorial activities, serving as an Associate Editor for several journals.
